  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

Lebanese Shish Tawook Chicken

  • 4 servings Lebanese Shish Tawook Chicken (prepared separately)

Cucumber Laban – Lebanese Yogurt Sauce

  • 4 servings Cucumber Laban – Lebanese Yogurt Sauce (prepared separately)

Bowl Ingredients

  • 8 cups romaine lettuce, chopped
  • ½ cup hummus (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon lemon juice, plus more for serving
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon za’atar
  • Salt and pepper to taste
  • 2 cups cooked grain of choice such as bulgur wheat, quinoa, freekeh, or spelt (optional)

Instructions

  1. Prepare the Chicken and Sauce: Cook the Lebanese Sheet Pan Chicken Shish Tawook according to your preferred recipe and set aside. While the chicken is cooking, combine ingredients for the Cucumber Laban Yogurt Sauce in a medium bowl and refrigerate.
  2. Prepare the Tomatoes: In a small bowl, toss the halved cherry tomatoes with 1 tablespoon lemon juice, 1 teaspoon extra virgin olive oil, 1 teaspoon za’atar, and season with salt and pepper to taste. Set this tomato mixture aside to marinate briefly.
  3. Assemble the Bowls: Divide 8 cups of chopped romaine lettuce evenly among four bowls, adding ½ cup of cooked grains to each if using. Top each bowl with one serving of the prepared chicken and a serving of the cucumber laban sauce. Add two tablespoons of hummus and ¼ cup of the marinated tomato mixture to each bowl. Serve with additional lemon wedges for squeezing over the bowls just before eating.

Notes

  • For an authentic touch, prepare the chicken using a traditional Lebanese marinade with garlic, yogurt, lemon juice, and spices such as paprika and cumin.
  • The cucumber laban sauce can be made ahead and kept refrigerated for up to 2 days.
  • Use fresh za’atar for the best flavor, or substitute with a mix of thyme and sesame seeds if unavailable.
  • Grains such as bulgur wheat or quinoa add fiber and make this meal more filling, but can be omitted for a lighter option.
  • Adjust salt and pepper to taste throughout to ensure a perfectly balanced flavor.
