Instructions

  1. Sauté the Vegetables: Heat a large pot over medium-low heat and add the olive oil and butter. Once melted, add the diced onion, chopped carrots, chopped celery, minced garlic, grated ginger, salt, and pepper. Stir and cook until the vegetables are slightly softened, about 5 minutes.
  2. Add Lemon Zest and Chicken: Stir in the freshly grated lemon zest and the shredded chicken, coating the chicken and vegetables in the aromatic mixture.
  3. Add Liquids and Lemon Slices: Pour in the thinly sliced lemon, low-sodium chicken stock, turmeric and ginger chicken bone broth, and water. Bring the mixture to a boil over medium-high heat.
  4. Cook Pasta: Once boiling, add the ditalini pasta and reduce heat to a simmer. Cook the soup until the pasta is al dente, about 8 to 10 minutes, stirring occasionally to prevent sticking.
