  • Total Time: 1 hour 32 minutes
  • Yield: 10 servings

Ingredients

Graham Cracker Cookies

  • 1/2 cup Unsalted Butter (1 Stick, room temperature)
  • 6 tablespoons Brown Sugar
  • 1/3 cup Granulated Sugar
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups All Purpose Flour
  • 1 cup Graham Cracker Cookie Crumbs (divided into 3/4 cup and 1/4 cup)
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Baking Soda

Lemon Cream Filling

  • 6 ounces Cream Cheese (1 block, room temperature)
  • 5 ounces Sweetened Condensed Milk
  • 1/4 cup Fresh Lemon Juice
  • 1 tablespoon Fresh Lemon Zest

Toppings

  • 1/2 cup Whipped Cream
  • 10 Lemon Wedges/Slices

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C). Line a cookie sheet with parchment paper and set it aside for baking the cookies.
  2. Cream sugars and butter: In a large mixing bowl, cream the unsalted butter, brown sugar, and granulated sugar together until the mixture is light, fluffy, and well combined, about 2 to 3 minutes.
  3. Add egg and vanilla: Beat in the large egg and vanilla extract until fully incorporated, ensuring a smooth mixture.
  4. Combine dry ingredients: In a separate bowl or directly into the wet mix, add the all-purpose flour, 3/4 cup of the graham cracker crumbs, baking powder, salt, and baking soda. Mix until a thick cookie dough forms.
  5. Shape cookie dough: Divide the dough into 8 to 10 equal portions, about 3 to 4 tablespoons each, and roll each portion into a smooth round ball.
  6. Coat with graham cracker crumbs: Roll the balls of cookie dough into the remaining 1/4 cup of graham cracker crumbs, ensuring an even coating. Place them on the prepared cookie sheet, spacing them about 3 to 4 inches apart, placing only 6 per sheet to allow room.
  7. Create indentations: Use the back of a tablespoon to gently press a slight indent into the top of each cookie dough ball on the sheet. This will create space for the filling.
  8. Bake initial phase: Bake the cookies for 10 minutes in the preheated oven until they begin to set but are not fully baked.
  9. Re-press indents: Remove the cookies from the oven and press the indents again with the tablespoon to enlarge them slightly and maintain the space for filling.
  10. Finish baking: Return the cookies to the oven and bake for another 2 to 3 minutes or until the cookies are lightly golden and the tops are set but not browned.
  11. Cool cookies: Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
  12. Prepare lemon cream filling: In a large bowl, beat the cream cheese until smooth and creamy using a hand mixer or whisk.
  13. Add remaining filling ingredients: Mix in the sweetened condensed milk, fresh lemon juice, and lemon zest. Beat until the filling mixture is completely smooth and uniform.
  14. Fill cookies: Spoon the lemon cream filling evenly into the indents of the cooled cookies, filling each nicely.
  15. Add toppings: Top each filled cookie with a dollop of whipped cream followed by a small fresh lemon wedge or slice for garnish.
  16. Chill: Place the filled and topped cookies in the refrigerator to chill for at least 1 hour, allowing the filling to set and flavors to meld.
  17. Serve and enjoy: Once chilled, serve the Lemon Cream Pie Cookies and enjoy their bright, creamy, and sweet flavors.

Notes

  • Make sure the butter and cream cheese are at room temperature for smooth mixing.
  • Do not over-bake the cookies; they should be lightly golden and soft to maintain a tender texture.
  • The lemon cream filling can be made ahead and stored in the refrigerator for up to 2 days before filling the cookies.
  • For an extra touch, dust the finished cookies lightly with powdered sugar before serving.
  • If you prefer a stronger lemon flavor, add additional lemon zest or a few drops of lemon extract to the filling.
