Chicken and Marinade
- 2 lbs boneless skinless chicken thighs (8 thighs)
- 2 Tbsp avocado oil
- Zest of 2 lemons
- 3 Tbsp lemon juice
- 8 cloves garlic (minced)
- 1 tsp paprika
- ½ tsp sea salt (to taste)
Instructions
- Combine Ingredients: Add all the ingredients including chicken thighs, avocado oil, lemon zest, lemon juice, minced garlic, paprika, and sea salt into a zip lock bag. Seal the bag tightly and shake it well to ensure the chicken is evenly coated with the marinade.
- Marinate: Place the sealed bag in the refrigerator and marinate the chicken for at least 20 minutes. For best flavor, marinate for 2 to 12 hours to allow the lemon and garlic to deeply infuse the meat.
- Preheat Oven and Arrange Chicken: Preheat your oven to 425°F (218°C). Transfer the marinated chicken thighs along with the marinade into a large casserole dish, spreading them out in a single layer to ensure even cooking.
- Bake the Chicken: Bake the chicken in the preheated oven for 15 to 20 minutes until the internal temperature reaches 165°F (74°C). Use a meat thermometer for accuracy, as cooking time may vary according to thigh size and starting temperature.
- Broil for Crispiness: For a crispy exterior, switch your oven to the High Broil setting. Broil the chicken for 5 to 8 minutes, watching closely to crisp up the fatty bits and skin without burning.
- Rest Before Serving: Remove the chicken from the oven and let it rest for 10 minutes. This resting period helps the juices redistribute, resulting in moist and flavorful chicken thighs ready to serve.
