Ingredients

Instructions

  1. Make Thyme Simple Syrup: In a small saucepan, combine ½ cup water and ½ cup sugar. Add 10-14 sprigs of fresh thyme. Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 5 minutes to infuse the syrup with thyme flavor. Remove from heat and allow it to cool for 10 minutes. Strain out and discard the thyme sprigs.
  2. Prepare the Spritz: In a large pitcher, combine the cooled thyme simple syrup, ½ cup plus 3 tablespoons of gin, and ¼ cup fresh lemon juice. Stir well to mix all ingredients thoroughly.
  3. Add Club Soda and Chill: Pour in two 12-ounce cans of chilled club soda into the pitcher. Stir gently to combine without losing the carbonation. Optionally, add ice to keep it cold or refrigerate the pitcher until ready to serve.
