Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 1¼ teaspoons baking powder
- 1 tablespoon lemon zest
- 1 pinch salt (if using unsalted butter, add ¼ teaspoon salt)
Wet Ingredients
- 3⅓ ounces cold, cubed butter (⅓ cup + 2 tablespoons)
- 2 tablespoons milk (room temperature)
- 1 large egg (room temperature)
- 1½ teaspoons vanilla extract
- 1 tablespoon lemon juice
Extras
- 2-3 tablespoons powdered/icing sugar for dusting
Instructions
- Mix dry ingredients: In a large bowl or food processor, whisk together the all-purpose flour, granulated sugar, baking powder, lemon zest, and salt to combine evenly.
- Add wet ingredients and form dough: Add the cold, cubed butter, milk, egg, vanilla extract, and lemon juice to the dry mixture. Pulse in the food processor or mix by hand with a flat beater until the dough is almost formed. Adjust the dough by adding more flour if too wet or more milk if too dry.
- Knead and chill dough: Transfer the dough to a lightly floured surface and gently knead until it forms a soft, compact, non-sticky ball. Wrap the dough tightly in plastic wrap and refrigerate for at least one hour to firm up.
- Pre-shape and chill: Form the chilled dough into golf ball-sized balls (slightly larger if preferred). Place them on one or two parchment-lined baking sheets spaced about 1-1½ inches apart. Chill the balls in the refrigerator while the oven preheats, about 15-20 minutes.
- Bake the cookies: Preheat the oven to 350°F (180°C). Bake the cookies for approximately 15 minutes or until they are lightly golden around the edges.
- Cool and finish: Allow the cookies to cool on the baking pan for 10 minutes, then transfer them to a wire rack to cool completely. Once cool, dust the cookies lightly with powdered or icing sugar before serving. Enjoy!
Notes
- Store cookies in an airtight container at room temperature for up to 3 days.
- Cookies can be frozen for up to 2 months; thaw at room temperature before serving.
- If dough is sticky, chill longer or lightly dust hands with flour to handle.
- If dough is too dry, add a small amount of milk to achieve the right consistency.
