Ingredients
Dough
- 100 g lievito madre discard (not more than 2-3 days old)
- 107 ml lukewarm water
- 200 g all purpose flour
- 26 g olive oil
- 1/4 teaspoon salt
Topping
- 1-2 tablespoons olive oil
- 1-2 teaspoons oregano and/or rosemary
Instructions
- Prepare the dough: In a mixing bowl, combine the lievito madre discard, separated into small pieces, with lukewarm water. Sift in the flour, add the olive oil, and start kneading. Add the salt and continue kneading for 5-6 minutes until the dough is smooth and elastic. Transfer the dough to a flat surface and shape it into a ball.
- First rest: Place the dough ball in a lightly oiled bowl, cover with a clean towel, and let it rest for 45 minutes at room temperature to allow slight fermentation and relaxation.
- Preheat oven: Preheat your oven to 430°F (225°C). Line one or two baking sheets with parchment paper to prevent sticking during baking.
- Shape the grissini: Transfer the rested dough to a lightly floured surface. Divide the dough into 30-35 gram portions. Roll each portion into 9-10 inch long thin ropes—the thinner the ropes, the crispier the breadsticks will be. Place them spaced apart on the prepared baking sheets. If the dough is resistant or difficult to stretch, cover and let rest for an additional 15 minutes to relax the gluten.
- Apply topping and bake: Brush each breadstick lightly with olive oil. Sprinkle with oregano and/or rosemary as desired. Bake in the preheated oven for approximately 20-25 minutes until they turn golden and crunchy.
- Cool and serve: Remove from oven and let the grissini cool on a wire rack to maintain crispness. Serve warm or at room temperature and enjoy their delightful crunch.

- Using lievito madre discard not older than 2-3 days ensures freshness and effective fermentation.
- The thinner you roll the grissini, the crispier they become after baking.
- If the dough is tough to work with, allowing a second short rest will make shaping easier.
- Feel free to experiment with herbs for topping; rosemary and oregano complement the flavor well.
- Store leftover grissini in an airtight container to keep them crisp.
