These Lievito Madre Discard Grissini are crispy Italian breadsticks made using discarded lievito madre starter. They are easy to prepare with simple ingredients and baked until golden and crunchy. Perfect as a snack or appetizer with olive oil and herbs like oregano or rosemary.

  • Total Time: 1 hour 20 minutes
  • Yield: Approximately 12-14 breadsticks

Ingredients

Primary Ingredients

  • 100 g lievito madre discard (not more than 2-3 days old)
  • 107 ml lukewarm water
  • 200 g all-purpose flour
  • 26 g olive oil
  • ¼ teaspoon salt

Extras

  • 1-2 tablespoons olive oil (for brushing)
  • 1-2 teaspoons oregano and/or rosemary (for sprinkling)

Instructions

  1. Mix the Dough: In a mixing bowl, combine the lievito madre discard, breaking it into small pieces, with lukewarm water. Sift in the all-purpose flour, add olive oil, and start kneading. Add the salt and continue kneading for 5-6 minutes until you have a smooth dough.
  2. Rest the Dough: Transfer the dough to a flat surface, shape it into a ball, and place it in a lightly oiled bowl. Cover with a clean towel and let it rest for 45 minutes to allow the dough to relax and rise slightly.
  3. Preheat Oven and Prepare Pans: Preheat your oven to 430°F (225°C). Line one or two baking sheets with parchment paper for easy cleanup and to prevent sticking.
  4. Shape the Grissini: Transfer the dough to a lightly floured flat surface. Divide it into pieces weighing approximately 30-35 grams each. Roll each piece into long ropes about 9-10 inches in length. For crispier breadsticks, make the ropes thinner. Place the shaped breadsticks on the prepared baking sheets. If the dough feels difficult to handle or shape, cover the dough pieces and let them rest for an additional 15 minutes before shaping.
  5. Add Oil and Herbs: Brush the breadsticks with olive oil generously to help them brown and stay moist during baking. Sprinkle oregano and/or rosemary over the top for aromatic flavor.
  6. Bake: Bake the grissini in the preheated oven for 20 to 25 minutes until they are golden brown and crisp.
  7. Cool and Serve: Remove from oven and allow the breadsticks to cool on a wire rack to maintain crispiness, or enjoy them warm. These breadsticks make an excellent snack or accompaniment to soups and salads.

Notes

  • If you use refrigerated lievito madre discard, let it rest at room temperature for about an hour before using to activate the yeast.
  • Store leftover grissini in a glass jar or airtight container to keep them fresh and crunchy. Avoid plastic bags, which trap moisture and soften the breadsticks.
  • Grissini will stay crisp for up to one week but are best enjoyed within the first few days.
