Ingredients
Meat Mixture
- ½ Tablespoon olive or avocado oil
- 1 lb ground turkey, ground chicken, or lean ground beef
- 1 ½ Tablespoons taco seasoning
- 1 cup refried beans
- ¼ cup water
Nachos
- 9 oz tortilla chips
- 1 12 oz bag shredded Mexican cheddar cheese
Toppings
- 1 cup pico de gallo (strained if needed)
- ½ cup red onion (diced)
- ½ cup fresh cilantro (chopped)
- ½ cup pickled jalapenos (chopped, or 1 fresh jalapeno chopped)
- 1 avocado (chopped or guacamole dollops)
- ½ cup sour cream or Greek yogurt dollops
Instructions
- Prep: Gather all ingredients and preheat your oven to 400°F. Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Add chips: Arrange a layer of tortilla chips evenly on the prepared baking sheet and set aside while you prepare the meat mixture.
- Cook meat: Heat the olive or avocado oil in a skillet over medium heat. Once hot, add the ground meat along with the taco seasoning. Sauté until the meat is fully cooked through, breaking it up as it cooks. Then stir in the refried beans and water, mixing until warmed evenly. Remove the skillet from heat.
- Toast chips: Place the baking sheet with chips into the preheated oven and toast them for 4-5 minutes to enhance their crispness.
- Add cheese: Carefully sprinkle half of the shredded Mexican cheddar cheese over and under the chips on the baking sheet, tossing gently so the cheese starts melting and coats the chips nicely.
- Add meat: Evenly spread the cooked meat mixture over the cheesy chips, layering it to ensure each bite has flavor.
- Top: Sprinkle the remaining cheese on top of the meat and chips.
- Bake: Return the baking sheet to the oven and bake for another 5-6 minutes, or until the cheese is fully melted and bubbly.
- Add toppings & enjoy: Remove from the oven and garnish with pico de gallo, diced red onions, chopped fresh cilantro, pickled jalapenos, chopped avocado or guacamole dollops, and sour cream or Greek yogurt dollops. Serve immediately for best texture and flavor.
Notes
- You can substitute ground turkey, chicken, or lean ground beef depending on preference.
- For a spicier version, add more jalapenos or a dash of hot sauce to the meat mixture.
- If you prefer vegetarian nachos, omit the meat and increase the amount of refried beans and cheese.
- Use Greek yogurt instead of sour cream for a healthier topping option.
- To make cleanup easier, lining the baking sheet with foil or parchment paper is recommended.
