Ingredients
Liquid and Seasoning
- 5 (25 ounce) beer cans, divided
- 1 (3 ounce) Zatarain’s Crab Boil box
- 1 (3 ounce) Louisiana Crab Boil box
- 1 container Old Bay Seasoning, plus extra as needed (approx. 1/4 cup plus more)
- 2-3 fresh bay leaves
- 3 garlic bulbs, cut in half
- 3 lemons, cut into quarters and divided
- 3 limes, cut into quarters and divided
Vegetables
- 2 lbs Petite Yukon Gold Potatoes, washed
- 6 ears fresh corn, broken into quarters (or frozen corn cobs)
Protein
- 1 (32 ounce) smoked sausage, cut into 1 inch diagonal slices
- 2 lbs medium to large shrimp
- 12 cooked Blue Crabs
Condiments
- 1/2 cup butter
- 1 bottle hot sauce
Instructions
- Prepare the broth: In a large stockpot (at least 12 quarts), bring 6 quarts of water and 4 ½ cans of beer to a simmer. Add the Zatarain’s crab boil bag, empty the Louisiana crab boil contents into the pot, ¼ cup of Old Bay seasoning, bay leaves, garlic halves, potatoes, sausage, and half of the lemons and limes. Stir well.
- Season the broth: Taste the broth to check for smokiness, saltiness, and spiciness. Add more Old Bay seasoning if needed to achieve a balanced flavor.
- Simmer the potatoes and sausage: Allow the broth to simmer gently for 15 minutes, or until the potatoes are nearly soft, ensuring the flavors meld together.
- Add the corn: Add the corn quarters to the pot and continue cooking for an additional 10 minutes until tender.
- Set up the serving area: Prepare a space by covering the table with newspaper or brown paper, and place crab claw crackers, paper towels, and small bowls for dipping sauce nearby.
- Cook the shrimp and heat crabs: Add the shrimp to the pot and cook until they turn pink. Turn off the stove, then add the cooked blue crabs and allow them to sit in the hot liquid for 10-15 minutes to absorb flavors.
- Drain the boil: Strain the liquid from the pot, reserving ½ cup for the dipping sauce. Arrange the seafood, sausage, potatoes, and corn on a large platter or spread them directly on the prepared table.
- Make the dipping sauce: Melt the butter and whisk together with Old Bay seasoning to taste, a few dashes of hot sauce, the juice from the reserved lemons and limes, and the reserved cooking liquid. Pour into condiment bowls for serving.
Notes
- Storage: Refrigerate leftovers in an airtight container for up to 3 days. Store dipping sauce separately.
- Freezing: Freeze sausage, potatoes, and corn in freezer-safe containers for up to 2 months. Shrimp and crab lose quality after freezing, so best eaten fresh.
- Reheating: Warm leftovers gently in a covered skillet with a splash of water or broth over medium-low heat. Microwaving is possible but avoid overcooking seafood.
