Ingredients
Vegetables and Aromatics
- 2 teaspoons olive oil
- 1 carrot, diced
- 1 celery stalk, diced
- 1/2 of a red bell pepper, seeds removed, diced
- 1/2 of a small red onion, diced
- 4 garlic cloves, minced
Spices and Herbs
- 1/4 teaspoon crushed red pepper (optional for spice)
- 1/4 teaspoon cayenne pepper (optional for spice)
- 1/2 teaspoon Heinen’s paprika
- 1 teaspoon Heinen’s oregano
- 2 bay leaves
- Fresh cilantro for garnish
- Fresh parsley for garnish
- Fresh dill for garnish
- Green onions, chopped for garnish
Liquids and Base
- 3 tablespoons tomato paste
- 1 (15 ounce) can fire roasted diced tomatoes
- 4 cups vegetable broth
- 1/2 of a lime, juiced
Main Protein and Other
- 1 1/2 pounds fresh halibut fillets, cut into 1 1/2 inch chunks
- 1 package of pre-spiralized zucchini
- Lime wedges for serving
Instructions
- Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the carrot, celery, red bell pepper, red onion, and garlic. Sauté until the onion and bell pepper are soft, about 5 minutes.
- Add Spices and Tomato Paste: Stir in the crushed red pepper, cayenne pepper, paprika, and oregano. Sauté for another minute to release the flavors. Then add the tomato paste and cook for another minute while stirring constantly.
- Simmer Soup Base: Add the bay leaves, fire roasted diced tomatoes, and vegetable broth to the pot. Bring to a simmer and let cook for 15 minutes to develop the flavors.
- Cook the Fish: Add the halibut chunks to the simmering soup. Cook for 5 minutes or until the fish is opaque and cooked through, taking care not to overcook to maintain texture and moisture.
- Finish and Garnish: Stir in the lime juice, spiralized zucchini noodles, parsley, cilantro, dill, and green onions just before serving. Serve the soup hot with lime wedges on the side.
Notes
- Do not overcook the halibut to keep it tender and flaky.
- Adjust the level of spice by omitting or reducing the crushed red pepper and cayenne.
- Spiralized zucchini noodles should be added at the end to avoid becoming mushy.
- Use fresh herbs for the best flavor and aroma.
- Serve with crusty bread if desired for a more filling meal.
