  • 3 cups boiling water
  • 1 can vegetable broth
  • 1 can fire roasted tomatoes
  • 1 can artichoke hearts, drained
  • 1 cup black olives
  • 1/2 purple onion, sliced
  • 2 tablespoons fresh thyme (or 1 teaspoon dried thyme)
  • 1 teaspoon cumin
  • Sea salt and black pepper, to taste

  • Parmesan cheese
  • Fresh basil

Instructions

  1. Bring Water to Boil: In a large pot, bring 3 cups of water to a rolling boil to prepare for cooking the pasta and vegetables together.
  2. Add Ingredients: Add the gluten free pasta, vegetable broth, sliced purple onions, fire roasted tomatoes, drained artichoke hearts, black olives, fresh thyme, and cumin to the boiling water.
  3. Cook Pasta: Allow the mixture to return to a boil over high heat, stirring occasionally. Once boiling, reduce heat slightly to maintain a gentle boil and continue cooking the pasta. Stir with tongs occasionally to prevent sticking.
  4. Simmer and Reduce Sauce: As the water begins to reduce and creates a sauce, monitor the pasta’s doneness. If the sauce becomes too thick before pasta is fully cooked, add more hot water in 1/2 cup increments to thin the sauce and prevent burning.
  5. Season to Taste: Once the pasta is cooked and the sauce has thickened to your liking, season with sea salt and black pepper to taste.
  6. Serve: Immediately remove the pasta from the pot and plate it quickly to avoid overcooking. Garnish with fresh basil and/or parmesan cheese if desired, then serve hot.
