Ingredients
Salmon
- 4 Salmon Filets
Lemon Sauce
- 1/4 cup olive oil
- Juice of 1 lemon plus 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Greek Topping
- 1/2 English cucumber, diced
- 2 cups cherry tomatoes, halved
- 4-5 green onions, chopped (green and white parts)
- 1/4 cup red onion, diced
- 1 cup kalamata olives, halved
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat Oven: Preheat the oven to 450 degrees F (232 degrees C) to ensure it is hot enough to cook the salmon evenly and quickly.
- Make Lemon Sauce: In a small bowl, combine olive oil, lemon juice, lemon zest, dried oregano, dried parsley, salt, and black pepper. Mix thoroughly to create a flavorful lemon herb sauce.
- Prepare Salmon: Brush both sides of each salmon filet generously with the prepared lemon sauce to infuse flavor and prevent drying during baking.
- Bake Salmon: Place the salmon filets skin-side down on a non-stick baking sheet. Bake in the preheated oven for 12-14 minutes or until the salmon is cooked through and reaches an internal temperature of 145 degrees F.
- Prepare Greek Topping: While the salmon bakes, combine diced English cucumber, halved cherry tomatoes, chopped green onions, diced red onion, halved kalamata olives, crumbled feta cheese, and chopped fresh parsley in a medium bowl. Mix well to combine all flavors.
- Serve: Remove the salmon from the oven. Spoon the Greek topping over each piece of salmon while still warm. Serve immediately for best taste.
Notes
- To grill instead of baking, preheat the grill to medium heat and brush salmon with the lemon sauce. Lightly oil the grill grates, then grill salmon skin-side down for 6-9 minutes per side or until it flakes easily and reaches 145 degrees F internally.
- The lemon sauce can be prepared ahead and refrigerated for up to 24 hours to enhance flavor.
- For a lighter version, reduce the olive oil amount or use a low-fat cheese alternative instead of feta.
- Ensure the internal temperature of salmon reaches 145°F for food safety.
