Ingredients
Muffins
- 1.5 cups whole wheat flour
- 1 cup sun dried tomatoes, chopped finely
- 1 cup raw sunflower seeds
- 1 cup milk
- 6 Tbsp sunflower oil
- 2 eggs
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¼ tsp paprika
- 1 Tbsp cumin seeds
Optional Hummus Frosting
- Hummus (varieties such as avocado or basil for green, beet for pink-red, carrots or pumpkin for orange, turmeric powder for yellow)
- Baking paper (for piping)
Instructions
- Preheat the Oven: Set your oven to 350ºF (175ºC). Grease or line a 12-cup muffin tin with parchment paper to prevent sticking.
- Prepare Sun-Dried Tomatoes: Finely chop the sun-dried tomatoes into small pieces or blend them if you prefer a smooth texture for mixing into the batter.
- Mix Dry Ingredients: In a large bowl or a stand mixer, combine the whole wheat flour, baking powder, baking soda, salt, paprika, and cumin seeds ensuring they’re evenly mixed.
- Add Wet Ingredients: Pour in the milk, sunflower oil, and eggs to the dry ingredients, mixing thoroughly to form a consistent batter. Then fold in the chopped sun-dried tomatoes and raw sunflower seeds gently.
- Fill Muffin Tin: Evenly divide the batter into the prepared muffin tin, filling each cup to the top for full-sized muffins.
- Bake the Muffins: Place the muffin tin in the oven and bake for 18-20 minutes or until the muffins turn golden on top and a toothpick inserted comes out clean.
- Cool the Muffins: Remove the muffins from the oven and set them on a wire rack to cool slightly before serving.
- Prepare Hummus Frosting (Optional): Choose your preferred hummus flavor (e.g., avocado, beet, carrot, or turmeric-based). Layer different hummus colors on baking paper, roll it up, and place the roll into a piping bag without needing a special nozzle.
- Pipe the Frosting: Decorate the cooled muffins by piping the hummus frosting onto them using a swirl or a dip style for a beautiful and tasty finish.
- Serve and Enjoy: Enjoy the muffins warm, plain, with butter, or topped with your colorful hummus frosting as a Mediterranean-inspired treat.
