This Mediterranean Chicken Salad is a vibrant, healthy dish featuring white beans, chickpeas, artichoke hearts, sundried tomatoes, and feta cheese, all tossed in a tangy lemon and olive oil dressing. It's perfect for a quick, flavorful meal with fresh herbs and a balance of savory and tangy tastes.

  • Total Time: 15 minutes
  • Yield: 6 servings

Ingredients

Salad Ingredients

  • 2 cans (14 oz each) White beans / Cannellini Beans, drained and rinsed
  • 1 can (14 oz) Chickpeas, drained and rinsed
  • 4 oz Artichoke Hearts, roughly chopped
  • 1 Red Onion, sliced
  • 4 oz Feta cheese, cubed
  • 1 jar Roasted Red Peppers, drained and roughly torn
  • 1 cup Sundried Tomatoes, chopped
  • 1/3 cup chopped Fresh Parsley
  • Handful of Italian Basil, roughly torn

Dressing Ingredients

  • 1/3 cup Olive Oil (preferably oil from the sun-dried tomato jar)
  • 1 teaspoon Red Wine Vinegar
  • 3 tablespoons Fresh Lemon Juice
  • 1 teaspoon Dijon Mustard
  • 2-3 teaspoons Honey
  • 2 Garlic cloves, minced
  • Salt & Pepper to taste

Instructions

  1. Prepare the Ingredients: Roughly chop the sundried tomatoes and artichoke hearts. Drain, rinse, and drain well the white beans and chickpeas to ensure they are ready for the salad.
  2. Make the Salad Dressing: In a bowl, mix together the olive oil, red wine vinegar, fresh lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper. Taste and adjust the sweetness with more honey if the dressing is too sour; it should have a tangy, balanced flavor.
  3. Mix Onion and Parsley: Add the sliced red onion and chopped parsley to the dressing. Let this mixture rest for about 10 minutes to allow the flavors to meld.
  4. Assemble the Salad: In a large bowl, combine the drained beans, chickpeas, artichoke hearts, sundried tomatoes, roasted red peppers, torn Italian basil, and cubed feta cheese. Pour the dressing with onion and parsley over the salad and toss everything well to coat evenly.
  5. Serve: Serve the salad chilled or at room temperature as a refreshing Mediterranean-inspired meal or side dish.

Notes

  • Use the oil from the sun-dried tomato jar for extra depth of flavor in the dressing.
  • Adjust honey quantity based on your sweetness preference for the dressing.
  • Letting the salad rest for a few minutes before serving helps the flavors to meld beautifully.
  • This salad makes a great make-ahead meal and can be refrigerated for up to 2 days.
  • For added protein, grilled chicken or chickpeas can be included if desired.
