Medu Vada is a classic South Indian savory fritter made from urad dal batter, deep-fried to golden crisp perfection. These donut-shaped vadas are fluffy on the inside and crunchy on the outside, flavored with aromatic spices, curry leaves, and optional onion, ginger, and coconut. Traditionally served hot with sambar and coconut chutney, Medu Vada is an iconic breakfast or snack item enjoyed across India.

Ingredients

Main Ingredients

  • 1 cup or 200 grams urad dal (hulled & split or whole hulled black gram)
  • 2.5 to 3 cups water – for soaking lentils
  • 3 to 4 tablespoons water – or as needed, for grinding or blending lentils

Spices and Herbs

  • ½ teaspoon cumin seeds
  • ½ teaspoon black peppercorns – whole or crushed
  • 1 tablespoon curry leaves – chopped, or 7 to 8 curry leaves
  • 1 teaspoon green chilies – chopped, or 1 to 2 green chilies
  • 1 teaspoon ginger – finely chopped
  • 1 pinch asafoetida (hing), optional
  • ½ teaspoon salt or add according to taste

Optional Ingredients

  • ⅓ cup onions – finely chopped
  • ¼ cup coconut – chopped
  • 2 tablespoons coriander leaves – chopped

For Frying

  • oil – for deep frying, as needed

Instructions

  1. Soak Lentils: Rinse urad dal thoroughly in fresh water a couple of times, then soak it in 2.5 to 3 cups of water for 4 hours or overnight to soften.
  2. Grind Batter: Drain the soaked dal and grind it to a smooth, thick batter using 3 to 4 tablespoons of water as needed. The batter should be fluffy and hold its shape. If too watery, add semolina, urad dal flour, or rice flour to thicken it.
  3. Add Flavorings: Mix in cumin seeds, black peppercorns, chopped curry leaves, green chilies, ginger, asafoetida, salt, and the optional chopped onions, coconut, and coriander leaves. Combine thoroughly.
  4. Shape Vadas: Keep a bowl of water nearby and wet your palms. Take a portion of batter in your right hand, shape it into a round shape, and make a hole in the center using your thumb to form a donut shape. Alternatively, use banana leaves or a ziplock bag to shape the vadas.
  5. Heat Oil: Heat enough oil in a kadai or deep pan to deep fry. Maintain medium heat to ensure vadas cook evenly inside and outside.
  6. Fry Vadas: Gently slide shaped vadas into the hot oil without overcrowding. Fry until they turn slightly golden on one side, then gently turn them over with a slotted spoon. Continue frying until crisp and golden brown.
  7. Drain Excess Oil: Remove fried vadas and place on kitchen tissue to absorb excess oil. Repeat frying with remaining batter.
  8. Serve: Serve hot or warm with traditional sides like sambar and coconut chutney. Alternatively, pair with chutneys such as mint, coriander, tomato, or onion chutney.
  9. Storage Tip: Leftover batter can be refrigerated for up to 1 day. Bring it to room temperature before frying again.

Notes

  • Use fresh urad dal for the best texture; old dal can result in dense vadas.
  • Grind lentils with minimal water to get a thick and fluffy batter.
  • Check batter consistency by scooping; it should hold shape well and be airy.
  • If the batter is too thin, add rice flour or semolina to make vadas crispier.
  • Maintain moderate oil temperature while frying; too hot oil burns the outside but leaves the inside raw, too cool oil makes vadas greasy.
  • Always shape vadas with wet palms to prevent sticking.
  • Add spices and herbs just before frying to keep the batter thick and prevent it from turning watery.
  • Test fry one vada first to check oil temperature and batter consistency before frying the entire batch.
