Ingredients
Chocolate Mousse
- 500ml whipping cream
- 250g milk chocolate, chopped
- 1 tsp vanilla extract
For Topping
- 3 pieces of milk chocolate for grating
Instructions
- Prepare chocolate for topping: Set aside three pieces of milk chocolate to be used later for garnishing the mousse.
- Heat cream: Pour half of the whipping cream (250ml) into a small saucepan and gently heat it over low heat until small bubbles begin to appear around the edges, but do not boil.
- Melt chocolate: Add the chopped milk chocolate and vanilla extract to the warm cream, stirring continuously to combine. Whisk the mixture thoroughly until all lumps have melted and you achieve a smooth consistency.
- Combine cream mixtures: Remove the saucepan from heat and pour the chocolate mixture into a glass jug or mixing bowl. Add the remaining 250ml of whipping cream and whisk until the mixture is uniformly smooth.
- Initial chilling: Place the mixture in the freezer for 30 minutes. After chilling, remove and stir well to make sure the texture is even.
- Whip until peaks form: Using an electric mixer or hand beater, whisk the mixture until soft peaks develop. Be cautious not to over-whip as this can cause the mixture to curdle.
- Assemble and garnish: Spoon the mousse evenly into six serving glasses. Grate the reserved chocolate pieces over the top for garnish. Then, refrigerate the assembled mousse for at least 2 hours or preferably overnight to set.
- Serve: Remove the mousse from the refrigerator about 10 minutes before serving to allow it to soften slightly for a creamy texture.
Notes
- Use good quality milk chocolate for the best flavor and smooth texture.
- Do not overheat the cream to avoid burning or curdling.
- Whisking to soft peaks is key to achieving a light, airy mousse.
- For a firmer mousse, chill overnight; for a softer texture, chill for 2 hours.
- Allowing the mousse to sit out for a few minutes before serving improves the mouthfeel.
