These Mini Key Lime Pies are a delightful and portable treat featuring a tangy, creamy lime filling nestled in a crisp graham cracker crust. Perfectly portioned in muffin liners, these pies are easy to make and ideal for any occasion, offering a refreshing tropical flavor with the option of a luscious whipped cream topping.

  • Total Time: 2 hours 45 minutes
  • Yield: 12 mini pies

Ingredients

Filling

  • 1 (14 ounce) can sweetened condensed milk
  • 4 large eggs
  • 1/2 cup key lime juice OR regular lime juice (approx. 1 lb. of Key limes OR 4-5 regular limes)

Crust

  • 2 cups finely crushed Graham crackers (about 12 sheets)
  • 1/4 cup all-purpose flour
  • 1/2 cup salted butter OR unsalted butter + 1/4 teaspoon sea salt, melted

Optional Topping

  • Whipped cream

Instructions

  1. Preheat and Prepare Pan: Preheat oven to 350℉ (175℃) and line a muffin pan with paper liners to prevent sticking and make removal easy.
  2. Make Filling Mixture: In a mixing bowl, add the sweetened condensed milk, eggs, and lime juice. Use a hand mixer to blend the ingredients smoothly for about 15 seconds, scraping down the sides and bottom with a spatula to ensure a consistent mixture.
  3. Prepare Crust: In another bowl, combine the finely crushed Graham crackers, all-purpose flour, and melted butter. Stir thoroughly until the mixture is evenly moistened and holds together slightly.
  4. Form Crusts: Evenly divide the graham cracker crust mixture among the muffin liners. Use a cup or shot glass to firmly press down and compact the mixture into solid mini crusts that will support the filling.
  5. Fill and Bake: Pour the prepared key lime batter evenly into each crust-lined muffin cup. For ease, pour the filling from a liquid measuring cup. Bake in the preheated oven for 14 to 15 minutes, or until the edges are set and the centers have a slight jiggle when gently shaken.
  6. Cool and Chill: Remove from the oven and let the pies cool on the counter for 30 minutes. Then refrigerate them for at least 2 hours to fully set and develop flavor.
  7. Serve: Optional - top each mini pie with whipped cream before serving. Enjoy the refreshing tang and creamy texture of these bite-sized desserts!

Notes

  • Key lime juice offers a more tart and authentic lime flavor, but regular lime juice works well too.
  • This recipe has not been tested with bottled Key lime juice; fresh juice is recommended for best taste.
  • To crush Graham crackers finely, use a food processor or place them in a sealed plastic bag and crush with a rolling pin.
  • Store assembled mini key lime pies in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze mini pies in freezer-safe packaging for up to 1 month.
