This Mint Chocolate Chip Ice Cream Pie is a refreshing and indulgent dessert featuring a crunchy Oreo cookie crust, creamy mint chocolate chip ice cream filling, topped with hot fudge sauce, whipped cream, and extra Oreo pieces. Perfect for a cool treat that combines rich chocolate flavors with the refreshing taste of mint in a luscious frozen pie.

  • Total Time: 4 hours 30 minutes
  • Yield: 8 servings

Ingredients

Crust

  • 28 Oreo Cookies (divided)
  • 6 tablespoons Unsalted Butter (melted)

Filling and Toppings

  • 1 quart Mint Chocolate Chip Ice Cream
  • 4 ounces Hot Fudge Sauce
  • 8 ounces Whipped Cream (Cool Whip or homemade)

Instructions

  1. Make the Oreo Crumbs: Add 25 of the Oreo cookies into a blender or food processor and blend until you have a fine crumb throughout.
  2. Prepare the Crust Mixture: Transfer the Oreo crumbs to a medium bowl and mix with the melted unsalted butter until you form a pasty mixture.
  3. Form the Crust: Spread the Oreo crumb mixture evenly in the bottom and up the sides of a greased 9-inch pie pan, pressing firmly so the crust will slice nicely.
  4. Chill the Crust: Place the crust in the freezer for 20 to 30 minutes until firm.
  5. Soften the Ice Cream: Allow the mint chocolate chip ice cream to soften at room temperature for about 20 minutes for easier spreading.
  6. Fill the Pie: Scoop softened ice cream into the chilled crust and press evenly along the bottom and sides. Place the pie back in the freezer to harden for at least 4 hours.
  7. Add Hot Fudge Sauce: Remove the pie from the freezer and drizzle the 4 ounces of hot fudge sauce evenly over the top of the ice cream layer.
  8. Garnish with Oreo Pieces: Chop the remaining 3 Oreo cookies and sprinkle them generously over the hot fudge topping.
  9. Add Whipped Cream: Pipe or spread the whipped cream around the edges of the pie to create a decorative border.
  10. Serve: Slice the pie into 8 pieces and enjoy this cool and creamy dessert.

Notes

  • Allow ice cream to soften sufficiently for easy spreading but don’t let it melt completely.
  • Press the crust firmly and evenly to ensure it holds its shape when sliced.
  • Use good quality hot fudge sauce for best flavor contrast.
  • Store leftover pie tightly covered in the freezer to maintain texture and freshness.
  • For a homemade whipped cream alternative, whip heavy cream with a little sugar and vanilla extract until stiff peaks form.
