Ingredients
Main Ingredients
- 1 pound Baby carrots
- 1/4 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2.5 tablespoons Butter (divided)
- 1.5 tablespoons Miso paste
- 1.5 tablespoons Maple syrup
- 1 clove Garlic, minced
- 1/2 cup Vegetable or chicken stock
- Fresh parsley for garnish (optional)
Instructions
- Prepare the carrots and miso butter mix: Clean and trim the tops of the baby carrots. In a bowl, combine miso paste, 1 tablespoon of softened butter, maple syrup, and minced garlic to create the miso butter glaze.
- Sear the carrots: Heat a heavy bottom 12-inch skillet over medium-high heat. Melt 1.5 tablespoons butter, then add the carrots. Sear for about 2 minutes, stirring occasionally until the carrots develop slightly caramelized edges.
- Steam the carrots: Reduce the heat to medium-low, add 1/4 cup of vegetable or chicken stock, and immediately cover the skillet with a lid. Let the carrots steam for about 1 minute to become tender while retaining a pleasant crunch.
- Stir and continue cooking: Remove the lid, give the carrots a good stir, and cook uncovered for another minute to concentrate flavors.
- Add the miso butter glaze: Lower the heat further, add the prepared miso butter mixture to the skillet, and toss the carrots thoroughly to coat them evenly with the glaze.
- Create a finishing sauce: Pour the remaining stock into the pan, stir gently to combine, and cook for just 30 seconds to form a light sauce. Switch off the heat.
- Serve and garnish: Transfer the glazed carrots to a serving dish and garnish with fresh parsley if desired. Serve warm.
Notes
- Use softened butter for easier mixing with the miso paste and maple syrup.
- To keep the carrots tender yet crunchy, do not over-steam. One minute with the lid on is sufficient.
- Vegetable stock keeps this dish vegetarian; chicken stock can be used for added richness.
- Maple syrup can be substituted with honey or agave nectar if preferred.
- This dish pairs well with roasted meats, grilled fish, or as part of a vegetarian meal.
