This Miso Salmon recipe is a quick and flavorful dish perfect for a healthy weeknight dinner. The salmon is marinated in a savory blend of miso paste, mirin, brown sugar, ginger, and garlic, then baked alongside fresh spring peas and snap peas. Finished with a garnish of scallions and sesame seeds, it delivers a delicious umami flavor with a caramelized finish from optional broiling.

  • Total Time: 25 minutes
  • Yield: 2 servings

Ingredients

Marinade

  • 1 tablespoon olive oil
  • 1 tablespoon toasted sesame oil
  • 1/4 cup Mirin (or substitute 1 1/2 tablespoons honey and 2 1/2 tablespoons water)
  • 2 tablespoons miso paste
  • 1 tablespoon brown sugar, honey or maple syrup
  • 2 teaspoons fresh ginger, finely minced or ginger paste
  • 3 garlic cloves, finely minced
  • Optional: 1/8 teaspoon liquid smoke (for smoky flavor)

Salmon and Vegetables

  • 2 pieces of salmon fillets, 4 to 6 ounces each (or black cod or sea bass)
  • Pinch of salt and pepper
  • 1 teaspoon orange zest (optional)
  • 1-2 cups fresh shelled spring peas (or substitute shelled edamame)
  • 2-3 cups fresh snow peas or snap peas (or substitute asparagus or French green beans)

Garnish

  • Scallions, sliced
  • Sesame seeds

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the salmon and vegetables.
  2. Prepare Marinade: In a small bowl, whisk together olive oil, toasted sesame oil, mirin (or honey-water substitute), miso paste, brown sugar (or honey/maple), minced ginger, garlic, and optional liquid smoke until smooth and well combined.
  3. Arrange Vegetables: On a parchment-lined sheet pan, place the spring peas and snap peas to one side, spreading them out evenly.
  4. Prepare Salmon: Pat the salmon fillets dry with a paper towel. Brush the marinade liberally on all sides of each piece, then spoon some extra marinade over the top of the salmon.
  5. Season Salmon: Sprinkle a pinch of salt and pepper over the salmon fillets. Optionally, add orange zest on top for a citrus note.
  6. Marinate Vegetables: Drizzle remaining marinade over the peas and toss lightly to coat. Alternatively, toss vegetables with olive oil, salt, and pepper if preferred.
  7. Bake: Place the sheet pan in the preheated oven and bake for 12 to 15 minutes, depending on the thickness of the salmon, until cooked through. Thicker pieces may take longer, thinner pieces less time.
  8. Optional Broiling: For a caramelized top, switch the oven to broil and broil the salmon for an additional 2 minutes at the end of baking. Watch carefully to prevent burning.
  9. Serve: Divide the cooked vegetables between two bowls or plates, then place a salmon fillet on top of each.
  10. Garnish and Enjoy: Sprinkle scallions and sesame seeds over the salmon and vegetables before serving to add flavor and texture.

Notes

  • Mirin can be substituted with a honey and water mixture to keep the marinade sweet and balanced.
  • Choose fresh seasonal peas and snap peas for best flavor; asparagus or green beans also work well as substitutions.
  • If you prefer a smoky flavor, add a small amount of liquid smoke to the marinade.
  • Broiling at the end enhances the caramelization on the salmon but is optional.
  • This recipe works well with other firm fish such as black cod or sea bass.
  • Use parchment paper to prevent sticking and for easier cleanup.
