Mozzarella in Carrozza is a classic Italian fried cheese sandwich that features gooey mozzarella cheese sandwiched between egg-dipped, fried white bread. Crispy on the outside and melty on the inside, this delicious recipe is quick to prepare and perfect for a comforting snack or light meal.

  • Total Time: 20 minutes
  • Yield: 3 sandwiches

Ingredients

Bread and Cheese

  • 6 slices white bread
  • 4 ounces (115 grams) low moisture mozzarella cheese

Batter and Coating

  • ¾ cup (180 ml) whole milk
  • 1 cup (125 grams) plain all purpose flour
  • 2 large eggs, beaten
  • Salt to taste

For Frying

  • Olive oil for frying

Instructions

  1. Prepare the sandwiches: Cut the crusts off the white bread slices. Take two slices per sandwich and place slices of low moisture mozzarella cheese between them. Sprinkle a little salt on the cheese and press the sandwich firmly to seal.
  2. Coat the sandwiches: Quickly dip each sandwich into the whole milk, then coat it evenly with flour, especially ensuring the edges are well floured. Finally, dip the sandwich into the beaten eggs to create an eggy coating.
  3. Fry the sandwiches: Heat olive oil in a skillet over medium heat to about 340-350°F (170-180°C). Carefully place the sandwich in the hot oil. Fry for about 2 minutes on one side until well browned and crisp, then flip and fry the other side similarly.
  4. Drain and serve: Remove the fried sandwiches and drain on absorbent paper to remove excess oil. Repeat the frying process with remaining sandwiches. Serve the Mozzarella in Carrozza hot for the best gooey and crispy experience.

Notes

  • Use low moisture mozzarella rather than fresh mozzarella to prevent excess water in the sandwich.
  • White sandwich bread works perfectly for this recipe.
  • Place the mozzarella cheese near the edges of the bread to avoid it escaping and burning in the oil.
  • Season the mozzarella lightly with salt unless adding salty ingredients like anchovies.
  • Press the sandwich firmly to help seal it before coating and frying.
  • Make sure to thoroughly coat edges with flour and egg wash to prevent leakage during frying.
  • Ensure the oil temperature is around 340-350°F (170-180°C). Test by dropping a crust piece – it should bubble gently.
  • This is not a low-fat recipe; the nutritional values exclude the oil absorbed during frying.
