- 1 cup Old fashioned oats
- 1/4 cup Maple syrup or honey
- 24 oz AE Dairy cottage cheese
- 1 tbsp Vanilla extract
- 3/4 cup Peanut butter, softened
- 1/2 cup Protein powder, chocolate or vanilla
- 1/2 cup Unsweetened cocoa powder
Chocolate Coating
- 1 tbsp Coconut oil, melted
- 1 cup Chocolate chips, divided
- Flaky sea salt, optional
Instructions
- Blend the base mixture: In a blender, combine the oats, maple syrup, cottage cheese, vanilla extract, and softened peanut butter (warming the peanut butter slightly helps it blend smoothly). Blend until the mixture is completely smooth.
- Mix protein and cocoa: Transfer the blended mixture to a bowl. Add protein powder and unsweetened cocoa powder, mixing until fully combined. Fold in 1/4 cup of the chocolate chips evenly.
- Form the bites: Using a portion scoop or measuring spoon, scoop out tablespoon-sized portions of the mixture. Roll each portion into a ball and place on a sheet pan. Freeze these balls for 5-10 minutes to set.
- Melt chocolate coating: In a small bowl, combine the remaining chocolate chips and melted coconut oil. Microwave in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
- Dip and coat bites: Dip each chilled protein bite into the melted chocolate, roll to coat completely, then lift out allowing excess chocolate to drip off. Place coated bites back onto the sheet pan. Sprinkle with flaky sea salt if desired. Repeat for all bites.
- Chill to set: Place the coated bites in the refrigerator to allow the chocolate shell to fully set. Store in the fridge for up to one week or freeze for 3-4 weeks. Best enjoyed chilled.
