Ingredients
For The Cheesecake Balls:
- 8 oz. block of cream cheese, softened to room temperature
- ⅓ cup sugar
- 1 tsp vanilla extract
- 2/3 cup graham cracker crumbs*
For Coating:

- melted chocolate (about 12 oz. with 1 tsp canola oil)

Instructions
- Mix Ingredients: In a medium bowl, use an electric mixer to beat the softened cream cheese, vanilla extract, and sugar until smooth and creamy. Then stir in the graham cracker crumbs to combine.
- Freeze Mixture: Place the mixture in the freezer for about 30 minutes to allow it to firm up slightly, which will make rolling easier.
- Form Balls: Lightly grease your hands with cooking spray to prevent sticking. Roll the chilled mixture into bite-sized balls, reapplying grease as needed due to stickiness.
- Coat Balls: Roll each ball in your choice of coating such as sprinkles, additional graham cracker crumbs, or melted chocolate mixed with canola oil. If using chocolate, you can also add sprinkles on top for decoration.
- Chill to Set: Place the coated cheesecake balls in a sealed container and chill for at least 4 hours to allow them to firm up properly. They can be eaten immediately but will have a creamier texture right after coating.
- Storage: Store cheesecake balls in the refrigerator for up to 5 days, or freeze for up to 3 months in an airtight container.
Notes
- For a creamier texture, reduce the amount of graham cracker crumbs between 1/3 and 1/2 cup, but note this will make the balls softer and better suited for chocolate coating.
- Flavor variations: add 1 tsp fresh lemon juice, 1/2 tsp lemon or almond extract, a couple dashes of cinnamon, or pumpkin spice. Mini chocolate chips can also be mixed into the batter.
- Chilling for at least 4 hours is crucial for firm texture; overnight chilling is even better for a no-bake cheesecake consistency.
