- 2 cups almonds
- 8 dates
- 1/4 cup cacao powder
- 2 Tbsp protein powder (homemade with 5 seeds or store-bought)
- 1/2 tsp salt
Instructions
- Process Almonds: In a food processor or blender, blend the almonds to your desired consistency – whether chunky, fine crumbs, or a mix of both.
- Add Remaining Ingredients: Add the dates, protein powder, cacao powder, and salt to the blended almonds. Blitz until the mixture is well combined and forms clumps.
- Shape Protein Balls: Using your hands, shape approximately 20 balls from the mixture. Each ball should be big enough to require 2-3 bites.
- Enjoy or Store: Once rolled, the protein balls are ready to eat as is, or optionally covered with toppings. Store any extras in the fridge for later consumption.
- Optional Topping: For powder or small pieces toppings, poke the balls with a fork or skewer and roll them in the topping, pressing gently to adhere. For chocolate and chunky toppings, dip the balls in melted chocolate, then quickly roll in the topping, and place on parchment paper until chocolate sets.
Notes
- Use soft, pitted dates to ensure the mixture blends well.
- Feel free to customize toppings such as shredded coconut, chopped nuts, seeds, or cocoa nibs.
- Store protein balls in an airtight container in the refrigerator for up to one week.
- Protein powders can be substituted with your preferred type, including plant-based or whey.
- If mixture is too dry, add a small amount of water or nut butter to help it stick.
