Ingredients
Dry Ingredients
- 1 tsp ground cardamom
- 1 pinch nutmeg
- 1/2 tsp salt
- 1 and 1/4 cups all-purpose flour
Wet Ingredients
- 3 large eggs
- 3/4 cups sugar
- 2/3 cups butter (melted and cooled slightly)
- A little water (to thin batter if needed)
Instructions
- Whisk Eggs and Sugar: In a bowl, whisk the 3 large eggs and 3/4 cup sugar vigorously until the mixture thickens and becomes pale and fluffy, about 3-5 minutes.
- Add Butter: Melt 2/3 cup butter and let it cool slightly to prevent cooking the eggs. Gradually add the melted butter into the egg and sugar mixture while stirring to combine thoroughly.
- Add Spices and Flour: Mix in 1 tsp ground cardamom, a pinch of nutmeg, and 1/2 tsp salt. Slowly incorporate 1 and 1/4 cups all-purpose flour while stirring continuously to create a smooth batter without lumps.
- Rest the Batter: Let the batter rest for at least 30 minutes at room temperature. This rest time improves the texture of the krumkake, resulting in tender yet crisp cookies.
- Preheat Krumkake Iron and Bake: Heat your krumkake iron according to the manufacturer’s instructions. Spoon about one heaping tablespoon of batter onto the center of the iron and close it to bake until golden brown and crisp, usually around 1-2 minutes per cookie. If the batter thickens too much, add a little water to thin it.
- Shape the Cookies: While the cookies are still hot and pliable, quickly remove them from the iron and shape using a wooden krumkake roller or drape them over a cup to form cones or rolls. Work swiftly as they harden quickly once cooled.
- Cool and Store: Allow the shaped krumkaker to cool completely on a rack. Store them in a metal or glass tin lined with paper towels to retain crispness. They can also be frozen for longer storage.
Notes
- A krumkake iron is essential to achieve the traditional thin, crisp texture and lattice pattern.
- Letting the batter rest is crucial for the best texture.
- If you don’t have a krumkake roller, a wooden spoon handle or small rolling pin can work for shaping.
- Fill the cooled krumkake cones with whipped cream, berries, or ice cream for a classic Norwegian dessert experience.
- Store in an airtight container to retain crispness. Freezing preserves freshness for several weeks.
