Brownie Batter
- 1 cup butter, melted and slightly cooled
- 1 cup granulated white sugar
- 1 cup packed dark brown sugar
- 4 large eggs
- 1 tablespoon pure vanilla extract
- 1 cup all-purpose flour
- 1 cup Dutch-processed or unsweetened cocoa powder
- 1 teaspoon espresso powder (optional)
- 1 teaspoon kosher salt

- 1 ¼ cups chopped chocolate, divided
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking pan with nonstick cooking spray, then line it with parchment paper allowing an overhang on the sides. Spray the parchment paper again to prevent sticking. Set aside.
- Mix Sugars and Butter: In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until the sugar is dissolved and the mixture is smooth.
- Add Eggs and Vanilla: Add the eggs and vanilla extract to the sugar mixture and whisk until smooth and well combined.
- Add Dry Ingredients: Sift in the all-purpose flour and cocoa powder. Add the kosher salt and espresso powder if using. Gently stir the batter just until combined, being careful not to over mix to keep the brownies tender.
- Incorporate Chocolate Chunks: Fold in 1 cup of the chopped chocolate into the batter evenly.
- Pour Batter and Add Topping: Spread the batter evenly in the prepared baking pan. Sprinkle the remaining ¼ cup of chopped chocolate evenly over the top.
- Bake: Bake on the middle rack of the oven for 25-30 minutes until the brownies are just set to the touch. Avoid over baking as they will continue to set as they cool.
- Cool and Serve: Remove from the oven and allow the brownies to cool completely in the pan. Use the parchment paper overhang to lift the brownies from the pan and cut into 24 squares. Optionally, sprinkle with flaky sea salt before serving.

- Store the brownies in an airtight container at room temperature for up to 4 days.
- For the crispiest edges, use a USA standard 9×13-inch pan and parchment paper as indicated.
- Espresso powder enhances the chocolate flavor but is optional.
