Ingredients
Garlic-Parmesan Butter
- 3 Tablespoons butter, melted
- 1 Tablespoon grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon Italian seasoning
Dough
- 1 teaspoon + 2 Tablespoons olive oil
- 3/4 cup warm water
- 1/2 teaspoon granulated sugar
- 1-1/2 teaspoons Fleischmann's® RapidRise™ Yeast
- 1/2 teaspoon kosher salt
- 1-3/4 cups all-purpose flour, divided
Instructions
- Prepare the oven and skillet: Preheat your oven to 250 degrees Fahrenheit. Once it reaches temperature, turn the oven off to create a warm environment for proofing the dough. Lightly brush a 10-inch skillet with 1 teaspoon of olive oil to prevent sticking.
- Activate the yeast: In a large bowl, combine 3/4 cup warm water and 1/2 teaspoon granulated sugar, stirring until the sugar dissolves. Sprinkle 1-1/2 teaspoons rapid-rise yeast over the mixture and let it sit for 5 minutes to activate the yeast.
- Make the dough: Add 1/2 teaspoon kosher salt and 1 cup of the all-purpose flour to the yeast mixture and stir until well blended. Pour in 2 tablespoons olive oil and mix thoroughly. Gradually incorporate the remaining 3/4 cup of flour while mixing until the dough pulls away from the sides of the bowl.
- Shape and proof the dough: On a floured surface, shape the dough into a ball. Press it gently with your fingers into the oiled skillet, spreading it to cover the bottom and sides evenly. Cover the skillet with a dry kitchen towel and place it in the turned-off warm oven for 30 minutes to rise.
- Preheat oven for baking and prepare dough surface: Remove the skillet from the oven and increase the oven temperature to 400 degrees Fahrenheit. Using your fingers, press indentations into the surface of the dough evenly to create the classic focaccia dimples.
- Apply garlic-Parmesan butter and bake: In a small bowl, mix together the melted butter, Parmesan cheese, garlic powder, and Italian seasoning. Brush half of this butter mixture over the dough before placing the skillet in the preheated oven. Bake for 20 minutes or until the focaccia turns golden brown.
- Finish and serve: Once baked, remove the skillet from the oven and brush the remaining garlic-Parmesan butter over the hot focaccia. Let it cool slightly, then slice and serve warm for best flavor.
Notes
- Use warm water (about 110°F) to help activate the yeast effectively.
- Rapid-rise yeast speeds up the rising process but you can substitute with active dry yeast by allowing more rising time.
- Be gentle when creating indentations on the dough so as not to deflate it completely.
- For a crispier crust, bake the focaccia on a lower oven rack.
- Store any leftovers wrapped tightly at room temperature for up to 2 days or freeze for longer storage.
