Ingredients

For the Pan

  • 3-4 boneless, skinless chicken breasts

  • 2 cups cherry tomatoes
  • 1 lemon, thinly sliced

For the Vinaigrette

  • ½ cup olive oil
  • ¼ cup lemon juice
  • 1 tsp lemon zest
  • 3 tablespoons white wine vinegar

  • 1 teaspoon fresh rosemary, minced

Instructions

  1. Make the vinaigrette: In a medium mixing bowl, whisk together the olive oil, lemon juice, lemon zest, white wine vinegar, dijon mustard, salt, black pepper, minced fresh rosemary, and Herbs de Provence until fully emulsified and combined.
  2. Marinate the chicken: Place the chicken breasts in a large ziplock bag or mixing bowl, pour the vinaigrette over them, seal, and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.
  3. Preheat the oven: Set your oven to 400˚F (200˚C) to prepare for roasting the chicken and vegetables.
