- 6 vegan sausages
- 1 red onion, finely chopped
- 4 garlic cloves, minced
- 6 sun dried tomatoes, packed in oil, chopped
- 1 tin (400ml) chopped tomatoes
- 200ml water
- 1 tbsp tomato puree
- 250ml (1 cup) vegan cream
- 500g (17.5 oz) packet gnocchi
- 25g (1/4 cup) vegan parmesan or nutritional yeast
- 1/2 tsp salt
- Black pepper, to taste
- Large handful fresh basil, chopped (for garnish)
- 1-2 tbsp cooking oil (for frying)
Instructions
- Cook the vegan sausages: Heat a tablespoon of oil in a large skillet or pan over medium heat. Chop the vegan sausages into small 1/2-inch pieces. Add the pieces to the pan and cook for 4-5 minutes, stirring occasionally, until they are nicely browned. Remove the sausages from the pan and set aside in a bowl.
- Sauté the aromatics: Add a little more oil to the same pan if needed. Add the finely chopped red onion and cook for a few minutes until softened. Then add the minced garlic and cook for an additional 2 minutes, stirring frequently to prevent burning and to release their flavors.
- Add tomatoes and gnocchi: Stir in the chopped sun-dried tomatoes, tomato puree, the tin of chopped tomatoes, vegan cream, and uncooked gnocchi. Fill the empty tomato tin halfway with water (approximately 200ml) and add that liquid to the pan as well. Bring the mixture to a gentle simmer and cook for about 5 minutes, allowing the gnocchi to cook through and the sauce to thicken slightly.
- Combine vegan sausage and cheese: Return the cooked vegan sausage pieces to the pan and stir well to combine. Sprinkle in the vegan parmesan or nutritional yeast and mix until everything is heated through and the cheese has melted into the creamy sauce.
- Season and check doneness: Season with 1/2 teaspoon of salt and plenty of freshly ground black pepper to taste. Check that the gnocchi are soft and tender by piercing a piece with a fork.
- Serve: Remove from heat and serve immediately, garnished with chopped fresh basil leaves. Add extra black pepper and vegan parmesan if desired for additional flavor.

- Choose your favorite brand of vegan sausages, ideally ones with robust flavor to complement the creamy sauce.
- Gnocchi cooks quickly in the sauce; do not overcook as they can become mushy.
- Vegan parmesan alternatives or nutritional yeast provide a cheesy flavor without dairy.
- You can substitute vegan cream with canned coconut milk if you prefer a slightly different flavor and texture.
- For a spicier kick, add a pinch of red chili flakes when cooking the garlic and onions.
