This open-faced omelette with smoked salmon and cream cheese is a quick and elegant breakfast or brunch option. Fluffy eggs cooked gently with creamy dollops of cream cheese and silky smoked salmon create a luxurious texture and rich flavor. Finished with fresh sliced red onion, dill, chives, and capers, this dish offers a perfect balance of savory, creamy, and tangy notes, all ready in just 15 minutes.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Omelette

  • 6 eggs
  • ½ cup milk
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon butter

Toppings

  • 4 oz. cream cheese
  • 4 oz. smoked salmon
  • Sliced red onion (optional)
  • Chopped fresh dill (optional)
  • Chopped chives (optional)
  • Capers (optional)

Instructions

  1. Mix Eggs: In a small bowl or glass measuring cup, whisk together the 6 eggs, ½ cup milk, ¼ teaspoon salt, and ¼ teaspoon pepper until thoroughly combined and slightly frothy.
  2. Cook Eggs: Melt 1 tablespoon of butter in a 10-inch nonstick skillet over medium heat. Pour in the egg mixture and gently push the eggs from the edges toward the center with a spatula, cooking similarly to scrambled eggs until the eggs are about halfway set.
  3. Add Cheese and Salmon: Lower the heat to low. Evenly distribute dollops of cream cheese and torn pieces of smoked salmon over the partially cooked eggs. Cover the skillet and continue cooking gently for about 5 minutes until the eggs are fully set and cooked through on top.
  4. Serve: Remove the omelette from heat and carefully slide it onto a serving plate. Garnish with sliced red onion, chopped fresh dill, chives, and capers if desired. Slice and serve warm.

Notes

  • You can substitute whole milk with any milk of your choice such as almond or oat milk if preferred.
  • For a dairy-free version, replace cream cheese with a vegan cream cheese alternative and use a plant-based milk.
  • Be gentle when folding the eggs to maintain a tender texture.
  • This omelette can be served with toasted bread or a fresh salad for a complete meal.
  • Adjust the salt and pepper to taste, especially considering the saltiness of the smoked salmon and capers.
