  • 2 tablespoons salted butter

Instructions

  1. Preheat and season: Preheat your oven to 350°F and position a rack in the center. Pat the beef shanks dry thoroughly with paper towels, then season generously all over with kosher salt and freshly cracked black pepper.
  2. Brown the beef shanks: Heat the olive oil in an oven-proof braiser or Dutch oven over medium-high heat until shimmering. In batches, add the beef shanks and brown each side for 3 to 4 minutes until golden. Remove and set aside on a plate.
  3. Sauté the vegetables: Reduce heat to medium. In the same braiser, add diced celery, carrots, and onion. Cook, stirring frequently, until the onion becomes translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant. Stir in tomato paste, fresh thyme, rosemary, and bay leaves.
  4. Deglaze and build sauce: Pour in 2¼ cups of the white wine along with the beef stock. Increase heat to medium-high and cook, stirring, until the tomato paste is fully incorporated into the liquid, about 2 minutes.
  5. Braise the beef: Return the browned beef shanks to the braiser, cover with a lid, and transfer to the preheated oven. Cook until the beef is extremely tender and falling off the bone, about 2 to 2½ hours.
  6. Reduce the sauce: Carefully remove the braiser from the oven and place it back on the stovetop over medium-high heat. Remove the beef shanks onto a serving platter. Add the remaining ¾ cup of white wine and the butter to the braiser. Simmer the sauce, stirring occasionally, until it thickens slightly and reduces, about 15 minutes.
  7. Serve: Serve the beef shanks over creamy polenta, egg noodles, or mashed potatoes. Drizzle generously with the pan sauce and sprinkle with chopped fresh parsley for brightness.
