Ingredients

Shells

  • 8 stand taco shells

Beef Filling

  • 1 pound ground beef
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • 15 oz black beans, rinsed and drained

Toppings

  • 1 1/2 cups taco blend shredded cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 400 degrees Fahrenheit. Lightly spray a casserole dish with cooking spray, then stand the taco shells upright in the dish so they remain stable during cooking.
  2. Cook Ground Beef Mixture: In a skillet over medium heat, cook and crumble the ground beef until fully browned. Drain excess fat to keep the filling from being greasy. Add salsa, taco seasoning, and the rinsed and drained black beans to the skillet. Stir well and continue cooking on low heat until the mixture is heated through and flavors have melded.
  3. Assemble and Bake Tacos: Spoon the beef and bean mixture evenly into each taco shell. Sprinkle each taco generously with shredded taco blend cheese. Place the casserole dish in the oven and bake for 8 to 10 minutes, or until the cheese is melted and the taco shells are crispy and heated through.
