- 1 cup fresh spinach leaves, cut as desired
- 5 teaspoons shredded Parmesan cheese
Instructions
- Cook the sausage: In a large saucepan over medium heat, cook the crumbled Italian turkey sausage until no longer pink. Drain the meat well, then remove it from the pan and set aside.
- Sauté the aromatics: In the same pan, add canola oil and sauté the chopped onion until tender and translucent. Add the minced garlic and cook for an additional one minute to release its aroma.
- Add the soup ingredients: Pour in the water, great northern beans, undrained diced tomatoes, reduced-sodium chicken broth, uncooked elbow macaroni, and pepper. Stir gently and bring the mixture to a boil over medium-high heat.
- Simmer the soup: Cook the soup uncovered for 8 to 10 minutes, or until the elbow macaroni becomes tender. To preserve the broth’s flavor if storing leftovers, consider cooking the pasta separately and adding it just before serving.
- Finish with sausage and spinach: Reduce heat to low, stir the cooked sausage back into the soup along with fresh spinach leaves. Cook for 2 to 3 minutes until the spinach wilts completely.
- Garnish and serve: Ladle soup into bowls and sprinkle each serving with shredded Parmesan cheese. Taste and adjust seasoning with salt or a splash of lemon juice or white wine vinegar if desired for enhanced flavor.
Notes
- For more flavor, replace water with additional chicken broth.
- To keep pasta from absorbing too much broth when storing leftovers, cook macaroni separately and add it just before serving.
- This recipe uses low-sodium broth and does not add salt initially; season to taste before serving to suit your preference.
- The spinach adds freshness and nutrients, but can be substituted with kale or other leafy greens if preferred.
