Secret Sauce
- ¼ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon dijon mustard
- 1 teaspoon pickle juice
- ¼ teaspoon paprika

Patty Melts
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 12 ounces 85/15 ground beef
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon Worcestershire sauce
- 8 slices rye bread
- 3 tablespoons unsalted butter
- 4 slices Swiss cheese
- 4 slices cheddar cheese
Instructions
- Make the Secret Sauce: In a bowl, combine mayonnaise, ketchup, dijon mustard, pickle juice, paprika, and garlic powder. Whisk together until smooth and set aside for flavors to meld while preparing the patties and onions.
- Caramelize the Onions: Heat olive oil in a skillet over medium-low heat. Add the thinly sliced onions and cook gently, stirring occasionally, until softened and richly golden brown, about 30 minutes. If the onions start to dry out or risk burning, splash in a little water and turn down the heat slightly. Once done, remove from heat and set aside.
- Form and Cook Patties: In a bowl, mix ground beef with salt, pepper, and Worcestershire sauce. Shape the mixture into four thin, oblong patties sized to match your bread. In a skillet over medium heat, cook the patties until they are nicely browned on both sides, which should take a few minutes per side. Remove the patties and wipe out excess grease from the pan.
- Assemble and Cook the Patty Melts: Butter one side of each slice of bread. Place a slice of bread butter-side down in the skillet, then layer with one slice Swiss cheese, a cooked beef patty, a generous helping of caramelized onions, a spoonful of secret sauce, a slice of cheddar cheese, and finish with another slice of bread butter-side up. Cook over medium heat until the bottom bread is golden brown, then carefully flip and brown the other side, about 1-2 minutes per side.
Notes
- The secret sauce recipe yields more than enough for four sandwiches, with leftovers great for dipping or future use. Store any remaining sauce in a sealed container in the refrigerator for up to two weeks.
- You can substitute rye bread with your favorite sandwich bread if you prefer a different flavor or texture.
