Ingredients
For the Chicken and Peaches
- 4 tablespoons olive oil, divided
- 1 3/4 teaspoons kosher salt, divided
- 3/4 teaspoon ground black pepper
- 1 1/2 teaspoons garlic powder
- 1 teaspoon paprika
- 8 boneless skinless chicken thighs
- 4 ripe but firm peaches, sliced
- 2 medium shallots, thinly sliced
For the Basil Gremolata
- 1 small garlic clove, finely minced
- 1/3 cup fresh basil, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon sherry vinegar
- 1 teaspoon lemon zest
Instructions
- Prepare the Chicken: Preheat the oven to 425°F. In a large bowl, combine 2 tablespoons of olive oil, 1 1/2 teaspoons of kosher salt, ground black pepper, garlic powder, and paprika. Pat the chicken thighs dry with paper towels, then add them to the bowl and toss to evenly coat with the seasoning mixture.
- Sear the Chicken: Heat a large cast iron skillet over medium-high heat. Add the chicken thighs in a single layer and cook for 4 to 5 minutes, or until the first side is deeply browned. Flip the chicken to the other side.
- Add Peaches and Shallots: Arrange the peach slices and thinly sliced shallots around and between the chicken pieces in the skillet.
- Roast in the Oven: Transfer the skillet to the preheated oven and roast for 14 to 16 minutes, or until the chicken reaches an internal temperature of 165°F and the peaches are softened and lightly caramelized.
- Make the Basil Gremolata: While the chicken roasts, mix the minced garlic, chopped basil, chopped parsley, sherry vinegar, lemon zest, the remaining 2 tablespoons of olive oil, and the leftover 1/4 teaspoon kosher salt in a small bowl.
- Serve: Just before serving, spoon the basil gremolata mixture over the cooked chicken and peaches for a fresh, herbaceous finish.

- Ensure peaches are ripe but firm to avoid them becoming too mushy during roasting.
- Using a cast iron skillet helps develop a great sear and is oven-safe for roasting.
- You can substitute sherry vinegar with red wine vinegar if unavailable.
- Internal temperature for cooked chicken should reach 165°F for safety.
- If fresh basil or parsley is not available, dried herbs can be used but reduce quantity and adjust taste accordingly.
