Fruit Base
- 3 ripe peaches, skin on and cubed (or 8 ounces peach nectar)
Sweetener
- 2 ounces simple syrup
Flavorings
- 4 ounces fresh lime juice
- 2 3/4 ounces white rum
- 6 thin peach slices (for garnish)
Instructions
- Blend the peaches: In a blender or food processor, add the fresh cubed peaches and simple syrup. Blend until smooth, about 45 seconds. If using peach nectar instead of fresh peaches, you can skip this blending step.
- Combine the remaining ingredients: In a large measuring cup or bowl with a spout, combine the puréed peaches or peach nectar with simple syrup, fresh lime juice, and white rum. Gently stir to mix all ingredients evenly.
- Pour mixture into popsicle molds: Carefully pour the mixture into the popsicle molds. For pull-out style molds, leave about 1/4 inch of space at the top to allow for expansion when freezing. For lay-flat molds, fill fully. Place a thin slice of peach into each mold if desired for an attractive garnish.
- Insert popsicle sticks: Insert the popsicle sticks or holders into each mold according to the manufacturer's instructions. If your molds do not have stick holders, freeze the mixture for a few hours until slightly frozen and then insert wooden sticks to ensure they remain upright.
- Freeze the popsicles: Place the molds in the freezer and freeze for at least 24 hours, up to 36 hours, until completely solidified.
- Serve: Remove the popsicle molds from the freezer and allow them to sit for about 5 minutes at room temperature. This softens the edges, making it easier to unmold and serve your refreshing peach daiquiri popsicles.
Notes
- These popsicles contain alcohol; keep out of reach of children.
- Use ripe peaches for best flavor. If peaches are not in season, peach nectar works well as a substitute.
- To make simple syrup, dissolve equal parts sugar and water by heating until sugar is dissolved, then cool before use.
- For a non-alcoholic version, omit the rum and add extra peach nectar or lemonade.
- These popsicles can be stored in the freezer for up to 2 months in an airtight container.
