Delight in these homemade Peach Hand Pies, featuring juicy diced peaches combined with warm spices and baked in a flaky pie crust. Perfect as a portable dessert or snack, these hand pies are golden, bubbly, and lightly sweetened with a touch of sparkling sugar on top. They’re easy to prepare and can be frozen for convenient future treats.

  • Total Time: 50 minutes
  • Yield: 12 hand pies

Ingredients

Filling

  • 2 large peaches
  • 2 tablespoons brown sugar
  • 2 tablespoons granulated sugar
  • 1 tablespoon flour
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • Squeeze of lemon juice

Crust and Assembly

  • 1 batch of homemade pie crust (or pie crust for a 9-inch double-crust pie)
  • 1 egg
  • 1 tablespoon water
  • Sparkling sugar for topping (optional)

Instructions

  1. Preheat oven and prepare baking sheet: Preheat your oven to 400°F (205°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and make cleanup easier.
  2. Prepare the peach filling: Peel, pit, and dice the peaches finely. In a medium bowl, combine the diced peaches with brown sugar, granulated sugar, flour, cinnamon, ginger, nutmeg, and a squeeze of fresh lemon juice. Stir well and set aside to allow flavors to meld.
  3. Roll out pie crust and cut circles: On a floured surface, roll the pie crust into a rectangle roughly 15 by 18 inches in size. Using a round cutter or a glass, cut out 5-inch circles. Re-roll the scraps carefully as needed to cut out about 12 circles total, but avoid overworking the dough to keep it tender.
  4. Fill the dough circles: Place a heaping tablespoon of the peach filling in the center of each dough circle. Note that you may have some filling leftover.
  5. Seal the hand pies: Whisk together the egg and water to make an egg wash. Brush the egg wash halfway around the edge of each dough circle. Fold each circle in half over the filling and press the edges together. Use a fork to crimp and seal the edges securely.
  6. Prepare for baking: Arrange the sealed hand pies on the prepared baking sheet. Use a sharp knife to cut 2 small slits into the top of each pie to allow steam to escape during baking.
  7. Add finishing touches: Brush the top of each pie with the remaining egg wash and sprinkle with sparkling sugar if desired for a sweet, crunchy finish.
  8. Bake the hand pies: Bake in the preheated oven for 25-30 minutes, or until the pies are golden brown and the filling is bubbly. Once baked, let them cool on the baking sheet for 3-5 minutes before transferring to a wire rack to cool completely.
  9. Freeze for later: To freeze, place unbaked assembled hand pies on a parchment-lined baking sheet. Cut the 2 slits in each but do not brush with egg wash. Freeze until solid and then transfer to a zip-top freezer bag for storage up to 6 months.
  10. Bake from frozen: When ready to enjoy, place frozen hand pies on a lined baking sheet. Optionally brush with egg wash and sprinkle with sparkling sugar before baking. Bake in a 400°F oven for 25-30 minutes until golden and bubbly.

Notes

  • The filling quantities may yield a little extra; feel free to adjust based on your preference or save for topping ice cream.
  • Do not overwork the pie crust dough to ensure flaky, tender hand pies.
  • Brushing with egg wash helps seal the pies and adds a beautiful golden color.
  • Sparking sugar is optional but adds a delightful crunch and sparkle.
  • Freezing the pies before baking helps preserve freshness and makes for quick baking later.
