Ingredients
Apple Filling
- 5 medium apples, cored and diced (about 2 lbs)
- 1 tablespoon + 1 teaspoon arrowroot starch (arrowroot powder)
- 3 tablespoons pure maple syrup
- 1 teaspoon ground cinnamon
Crumble Topping
- ½ cup natural peanut butter
- ¼ cup pure maple syrup
- 1½ cups old-fashioned rolled oats
- ¼ cup almond flour
- ¼ cup chopped dry roasted peanuts
- ½ teaspoon sea salt
- ¼ cup solid coconut oil, not melted
Instructions
- Preheat Oven: Preheat your oven to 350ºF to prepare for baking the crumble.
- Prepare Apple Filling: In a medium bowl, toss the diced apples with the arrowroot starch to help thicken the filling as it cooks. Add 3 tablespoons of pure maple syrup and 1 teaspoon of ground cinnamon, mixing well to evenly coat the apples. Spread the apple mixture evenly in an 8×8-inch or 9×9-inch baking dish.
- Make Crumble Topping: Using the same bowl, combine ½ cup natural peanut butter and ¼ cup pure maple syrup. Add 1½ cups rolled oats, ¼ cup almond flour, ¼ cup chopped dry roasted peanuts, and ½ teaspoon sea salt. Mix using a fork or spatula until sticky but not overly wet. Finally, fold in ¼ cup of solid (not melted) coconut oil to help bind the topping.
- Assemble & Bake: Gently spoon and press the crumble topping evenly over the apple mixture in the baking dish. Bake uncovered for 25 minutes at 350ºF.
- Cover and Continue Baking: After 25 minutes, loosely tent the baking dish with foil to prevent the topping from burning. Return it to the oven and bake for an additional 30 minutes, allowing the apples to become tender and the topping to crisp.
- Cool and Serve: Remove from oven, discard the foil, and let the crumble cool for about 5 minutes before serving warm.
Notes
- Use firm, tart apples like Granny Smith or Honeycrisp for the best texture and flavor balance.
- Ensure the coconut oil is solid (not melted) when mixing the crumble to achieve the perfect crumbly texture.
- This dessert can be served with dairy-free vanilla ice cream or whipped coconut cream for extra indulgence.
- Store leftover crumble covered in the refrigerator for up to 3 days and reheat before serving.
- Arrowroot starch helps thicken the apple filling naturally as it bakes, preventing sogginess.
