- Add Remaining Ingredients: Add the pitted Medjool dates, cocoa powder, creamy peanut butter, vanilla extract, salt, protein powder, and the optional water to the food processor. Puree all ingredients until a crumbly dough forms. The mixture should hold together when you squeeze it, indicating the right consistency.
- Form Balls: Scoop about 1 tablespoon of the dough at a time, squeeze it firmly together, and roll it between your palms to form smooth balls. For added texture and presentation, you can roll the balls in finely chopped coconut or nuts, though this is optional.
- Storage: Place the energy balls in an airtight container and refrigerate for 1 to 2 weeks, ideally consuming them within 1 week for optimal freshness. Alternatively, you can store them at room temperature for up to 1 week. Before serving, allow the energy balls to come to room temperature for the best texture and flavor.
