Ingredients
Main Ingredients
- 1 cup gluten free old-fashioned oats
- 1 tablespoon chia seeds
- ¼ teaspoon cinnamon
- ½ cup plain Greek yogurt
- 1 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup or honey
- 2 tablespoons creamy peanut butter
- ¼ teaspoon salt
Toppings (Optional)
- Extra almond milk or Greek yogurt
- Sliced banana, strawberries, raspberries, or blueberries
- Nuts, coconut, seeds, granola, extra nut butter
Instructions
- Combine Ingredients: Add all of the main ingredients—gluten-free oats, chia seeds, cinnamon, Greek yogurt, almond milk, vanilla extract, maple syrup or honey, peanut butter, and salt—into a large wide-mouthed glass container with a lid, such as a Weck jar. Stir thoroughly until everything is well combined.
- Refrigerate Overnight: Cover the container securely and place it in the refrigerator for at least 2 hours or up to 8 hours overnight. This allows the oats and chia seeds to soak and soften, developing a creamy texture.
- Serve and Customize: After chilling, remove the oats from the fridge and stir them well. If the mixture is too thick, add an extra splash of almond milk or Greek yogurt to achieve your preferred consistency. Top with your choice of fresh fruits like sliced banana, strawberries, raspberries, or blueberries and additional nuts, coconut, seeds, granola, or extra nut butter for added flavor and texture. Serve immediately and enjoy your nutritious breakfast!
