Ingredients
Crust
- 24 Oreo cookies
- 5 tablespoons melted butter
- 1/8 teaspoon fine sea salt
Filling
- 1 1/2 cups heavy cream
- 1 (8-ounce) block low-fat cream cheese
- 1 cup natural peanut butter (well stirred)
- 1 1/2 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt
- 1 1/2 cups powdered sugar
Toppings (optional)
- Whipped cream
- Chocolate shavings
- Crumbled Oreos
- Chopped Reese’s
Instructions
- Prep the pan: Lightly grease a 9-inch pie plate with cooking spray to prevent sticking and make removal easier.
- Make the crust: Add Oreo cookies to a food processor and pulse until finely ground. Drizzle melted butter and 1/8 teaspoon fine sea salt over the crumbs and pulse until evenly moistened. Press the mixture evenly into the bottom and sides of the pie plate using your fingers or the bottom of a measuring cup. Freeze the crust until ready to use.
- Whip the cream: Using the whisk attachment on a stand mixer, beat the heavy cream on medium-high speed until stiff peaks form. Transfer the whipped cream to a separate bowl and set aside.
- Make the filling: In the same stand mixer bowl, switch to the paddle attachment and beat the cream cheese, natural peanut butter, vanilla extract, and 1/4 teaspoon fine sea salt on medium-high speed until smooth and fluffy, about 2 minutes. Add the powdered sugar and beat on low speed until combined. Add 1 cup of the whipped cream to the mixture and beat on low speed until mostly incorporated. Then turn off the mixer and gently fold in the remaining whipped cream by hand with a spatula until mostly uniform and streak-free.
- Chill: Pour the filling into the prepared Oreo crust and smooth the top with a spoon or spatula, optionally creating gentle swirls. Refrigerate the pie for at least 4 hours, or until fully chilled and set.
- Serve: Slice the pie and serve with your choice of toppings such as whipped cream, chocolate shavings, crumbled Oreos, or chopped Reese’s candies for added texture and flavor. Enjoy!
Notes
- Be sure to use natural peanut butter that is well stirred for the best texture and taste.
- Using low-fat cream cheese reduces richness slightly but still maintains the creamy texture.
- Freezing the crust before adding the filling helps it hold shape and prevents sogginess.
- The pie needs to chill at least 4 hours, so prepare ahead of time for best results.
- You can customize toppings to your preference, such as nuts, chocolate chips, or different candy bars.
