Ingredients
For the Crostini
- Soft French or narrow seeded baguette, sliced about ¼ inch thick
- Olive oil, for drizzling
Toppings
- Whole milk ricotta cheese
- Thinly sliced pears
- Good quality honey (local and raw, if available!)
- Few pinches dried thyme
- Crushed red chile flakes (optional; crushed black pepper is also nice)
- Good flaky sea salt
Instructions
- Preheat the broiler. Set your oven’s broiler to high and position an oven rack about 6 inches from the heat source to prepare for toasting the bread.
- Prepare the baguette slices. Arrange the sliced baguette pieces in a single layer on a rimmed baking sheet and lightly drizzle them with olive oil to ensure a golden and crisp texture.
- Broil the baguette slices. Place the tray under the broiler and toast the bread for 1 to 2 minutes, watching carefully until the tops turn golden and toasty. For a crunchier crostini, you can alternatively bake them at 350°F, but broiling yields a preferred texture with one toasted surface.
- Assemble the crostini. Just before serving, spread a generous amount of whole milk ricotta onto each toasted baguette slice. Top with a couple of thin pear slices and drizzle each with honey to add sweetness.
- Add seasoning and finish. Lightly crush dried thyme between your palms to release its aroma and sprinkle it on top. Add crushed red chile flakes or black pepper for some heat if desired, then finish with a sprinkle of flaky sea salt for balanced seasoning. Serve immediately and enjoy!
Notes
- This recipe serves as a flexible method rather than set quantities—you can make as many or as few crostini as you like.
- Using whole milk ricotta is key to achieving a more substantial and creamy texture.
- For a gluten- or grain-free alternative, omit the bread and instead spread ricotta on thicker pear slices, drizzling with olive oil and honey for savoriness.
- For single or small servings, toasting the slices in a toaster oven works perfectly.
