Ingredients
For the Bread Pudding
- 1 package Raisin English Muffins
- 2 ripe pears, peeled and diced
- 3 tbsp melted butter
- 3 ½ cups milk
- 1 tsp cinnamon
- ½ tsp cardamom
- Zest of 1 orange (about 1-2 tbsp)
- ½ cup sugar
- 8 egg yolks
- 2 whole eggs
For Serving
- 1 jar Caramel Sauce (we use Trader Joe's or Harry & David)
- Powdered sugar, for dusting
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a 9x9 inch baking pan with cooking spray and set aside.
- Toast Muffin Cubes: Cut the raisin English muffins into 1-inch cubes. Lightly toast them in the oven or in a toaster until just crisp. Set aside to cool.
- Make Custard Mixture: In a large mixing bowl, combine the milk, egg yolks, whole eggs, cinnamon, cardamom, orange zest, and sugar. Whisk well to fully incorporate the ingredients.
- Add Pears and Muffins: Fold the diced pears gently into the custard mixture, then add the toasted muffin cubes. Allow the bread cubes to soak up the custard for several minutes so they become fully saturated.
- Prepare Baking Dish: Pour the melted butter into the bottom of the prepared baking pan, spreading it evenly to coat the base.
- Assemble and Bake: Pour the soaked bread and pear mixture evenly into the buttered baking pan. Bake in the preheated oven for 45 minutes or until the pudding is set and the top is golden brown.
- Finish and Serve: Remove from the oven and while still warm, dust the bread pudding lightly with powdered sugar. Warm the caramel sauce gently and drizzle over the pudding or individual servings. Serve warm and enjoy!
