Ingredients

Chicken and Seasoning

  • ½ cup Mazola® Corn Oil, divided
  • 1 Whole Chicken, cut into 8 pieces
  • 2 tsp Salt, divided
  • 1½ tsp Seven Spices (or Allspice), divided
  • ½ tsp Black Pepper

Potatoes

  • 4 Russet Potatoes, peeled and sliced into ½ inch slices

Sauce

  • 10 cloves Garlic, crushed
  • 3 tbsp Lemon Juice
  • 1½ cups Chicken Broth

Instructions

  1. Preheat and Season Chicken: Preheat the oven to 400°F. In a large oven-safe pan or casserole dish, place the chicken pieces. Drizzle with ¼ cup of Mazola Corn Oil, then season with 1 tsp salt, ½ tsp black pepper, and 1 tsp seven spices. Toss to coat evenly.
  2. Bake Chicken Initially: Bake the chicken for 25 minutes at 400°F until halfway cooked through.
  3. Prepare and Air-Fry Potatoes: Meanwhile, peel and slice the potatoes into ½ inch thick slices. Toss them in a bowl with ¼ cup Mazola Corn Oil and 1 tsp salt. Air-fry the potatoes at 390°F for 18-20 minutes, turning them at least twice to ensure even cooking.
  4. Make Garlic and Lemon Sauce: In a measuring cup, combine the 1½ cups of chicken broth with the crushed garlic and lemon juice. Mix well to infuse the flavors.
  5. Assemble and Bake Final Dish: Remove the chicken from the oven after the initial 25 minutes. Layer the air-fried potatoes on top of the chicken, then pour the garlic and lemon broth mixture over everything. Reduce oven temperature to 375°F and continue baking for an additional 25-30 minutes until the chicken is fully cooked and tender.

Notes

  • Seven spices can be substituted with allspice if unavailable.
  • Using an air fryer for the potatoes enhances texture, but you can also bake them in the oven at 400°F until golden and crisp.
  • Make sure to check chicken doneness with a meat thermometer; it should reach an internal temperature of 165°F.
