These Pie Crust Cookies are a delightful way to use leftover pie dough, transforming simple ingredients into crispy, flaky mini pie slice treats. Cut into triangles with fringed edges, sprinkled with cinnamon sugar, and topped with a pecan, they bake to golden perfection and make a delicious snack or dessert.

  • Total Time: 1 hour 38 minutes
  • Yield: 25 cookies

Ingredients

Pie Crust Dough

  • 1 pie crust (use all butter pie crust recipe)

Toppings

  • 2 tablespoons white sugar
  • 2 teaspoons ground cinnamon
  • 25 raw pecans (not toasted)

Egg Wash

  • 1 egg
  • 1 teaspoon water

Instructions

  1. Cut triangles: On a lightly floured surface, roll out the pie dough to about ⅛-inch thickness. Cut the dough into approximately 3-inch-wide strips, then slice each strip into 2½-inch-long triangles. Gather and reroll any scraps to cut out more triangles.
  2. Make fringe: Take one triangle at a time and use the tines of a fork to gently press small, indented lines along the base. This creates a decorative edge resembling a pie crust.
  3. Chill: Line a large baking sheet with parchment paper and evenly space the cut triangles on it. Chill them in the refrigerator for at least 1 hour to help maintain their shape during baking.
  4. Make cinnamon sugar: In a small bowl, combine the white sugar and ground cinnamon, stirring until well mixed.
  5. Make egg wash: In another small bowl, beat the egg with about 1 teaspoon of water until fully combined.
  6. Preheat oven: Set the oven to 325°F (163°C).
  7. Decorate: Brush each chilled triangle with the egg wash. Then sprinkle cinnamon sugar generously on each piece, avoiding the fringed edges to keep the neat pie-slice look. Gently press one raw pecan into the center of each triangle to adhere firmly.
  8. Bake: Bake the cookies for 20 to 25 minutes until they are deep golden brown and crisp. Remove from the oven and transfer the pan to a wire rack to cool completely before serving.

Notes

  • Roll dough evenly to about ⅛-inch thickness to ensure proper crispness and avoid puffing.
  • Use raw pecans, as toasted nuts tend to brown too fast and may burn during baking.
  • Press the pecans gently into the dough so they stick well and prevent excessive puffing.
  • Avoid sprinkling cinnamon sugar on the fringed edges to keep the pie slice appearance tidy.
  • Chilling before baking helps the triangles maintain their shape and prevents spreading.
