  • 2-3 teaspoons Freshly Squeezed Lemon Juice

Instructions

  1. Combine initial ingredients: In a food processor, combine the banana, 1 1/2 cups of frozen pineapple chunks, the coconut cream, pineapple juice, 2 teaspoons of lemon juice, and vanilla extract. Process for about 5 minutes until mostly smooth.
  2. Add remaining pineapple: Add the remaining 1 1/2 cups of frozen pineapple chunks and continue processing for 2 to 3 minutes until the mixture is very smooth and creamy. If any large chunks remain, pulse the processor in short bursts until they break up.
  3. Taste and adjust sweetness: Taste the whip and add the remaining 1 teaspoon lemon juice and honey if you prefer it sweeter. Blend briefly to incorporate.
  4. Serve immediately: Enjoy the whip right away for the best, creamiest texture.
