For the crust:

- 1 teaspoon almond extract
- 1 cup whole milk

Instructions
- Prepare the crust: In a bowl or food processor, combine flour, salt, and 2 tablespoons sugar. Cut in cold cubed butter using a fork until the mixture has pea-sized chunks. If using a food processor, pulse for about 30 seconds. Add finely chopped pistachios. Gradually add ice water, 1-2 tablespoons at a time, mixing until dough forms a ball but is not overworked. Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
- Make the filling: Preheat the oven to 350°F (175°C). In a blender or food processor, combine the pistachios with half a cup of sugar to prevent caking and pulse until finely ground. In a bowl, beat cream cheese with the remaining half cup of sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts plus the whole milk. Whisk in the ground pistachio mixture until fully incorporated.
- Assemble the pie: Roll out the chilled pie dough and transfer to a 9-inch pie dish. Crimp edges decoratively. Pour the pistachio filling into the crust. Bake in the preheated oven for 45-50 minutes until the outer 3 inches are set but the center remains slightly jiggly. This indicates it will finish setting while cooling.
- Cool and serve: Allow the pie to cool completely at room temperature for 1-2 hours, then refrigerate for 2-3 hours to chill thoroughly. Serve cold, topped with whipped cream and a sprinkle of chopped pistachios.
