DOUGH
- 4 cups flour
- 5 beaten eggs
- 1 ½ teaspoons salt

FILLING
- 2 lbs Italian sausage (mix of 1 lb hot and 1 lb mild, or according to preference), casings removed and browned
- 1 lb tuma cheese, diced (or a mix of provolone and mozzarella, preferably the brick kind)
- 6 hard boiled eggs, chopped
- 1 cup grated pecorino romano cheese
- 2 beaten eggs
- 1 egg yolk mixed with a little water (for egg wash)
Instructions
- Prepare the Dough: In a large mixing bowl, combine the flour, salt, and black pepper. Cut in the vegetable shortening until the mixture resembles coarse crumbs. Gradually add the beaten eggs and water as needed to form a smooth, pliable dough. Knead lightly and set aside.
- Cook the Sausage: Remove casings from the Italian sausage and brown the meat in a skillet over medium heat until fully cooked. Drain any excess fat and let cool slightly.
- Mix the Filling: In a large bowl, combine the cooked sausage, diced tuma cheese (or mozzarella/provolone), chopped hard boiled eggs, grated pecorino romano, and the 2 beaten eggs. Mix thoroughly to blend all ingredients evenly.
- Assemble the Pie: Divide the dough into two portions: one slightly larger for the base. Roll out the larger portion on a floured surface to fit your pie dish, pressing into the bottom and sides. Pour the filling mixture into the crust, spreading it evenly.
- Top the Pie: Roll out the second portion of dough and cover the filling completely. Seal the edges by pinching the dough together. Cut small slits in the top crust to allow steam to escape during baking.
- Apply Egg Wash: Brush the top crust with the egg yolk and water mixture to give the pie a golden, glossy finish once baked.
- Bake: Preheat your oven to 350°F (175°C). Place the pie on a middle rack and bake for approximately 1 hour to 1 hour 15 minutes, or until the crust is golden brown and cooked through.
- Cool and Serve: Remove the pie from the oven and allow it to cool for at least 15-20 minutes before slicing. Serve warm or at room temperature.

- Using a mix of hot and mild Italian sausage allows customization of the heat level.
- Tuma cheese is traditional, but provolone and brick mozzarella work well substitutes.
