This Plum and Cream Cheese Tray Cake is a delightful and moist dessert featuring ripe plums folded into a cinnamon-spiced batter, topped with a luscious swirl of cream cheese and brown sugar. Baked in a slice tin, it offers a perfect balance of sweet and tangy flavors, making it an ideal treat for afternoon tea or a cozy dessert.

  • Total Time: 1 hour
  • Yield: 12 servings

Ingredients

Cake Batter

  • 5 ripe plums, approx 300g, cut and pitted
  • 150g butter, softened
  • 1 cup brown sugar (approx 200g)
  • 2 eggs
  • 1 tsp vanilla essence
  • 2 cups self-raising flour (approx 260g)
  • 1 tsp cinnamon

Cream Cheese Swirl

  • 225g cream cheese, softened
  • 3 Tbsp brown sugar (approx 45g)

Instructions

  1. Preheat and Prepare: Preheat the oven to 170°C fan bake. Line a 27 x 17 cm slice tin with baking paper to prevent sticking and ensure even cooking.
  2. Prepare Plums: Cut the plums into pieces and remove the stones. Set the chopped plums aside for folding into the batter and topping later.
  3. Cream Butter and Sugar: In the bowl of a stand mixer, beat the softened butter and brown sugar until the mixture is smooth and creamy, which helps to incorporate air for a light cake texture.
  4. Add Eggs and Vanilla: Add the eggs and vanilla essence to the butter and sugar mixture. Mix on high speed until the batter is pale and fluffy, indicating proper aeration of the batter.
  5. Add Dry Ingredients: Sift in the self-raising flour and cinnamon to the wet ingredients. Mix on low speed just until combined to avoid overmixing, which can toughen the cake.
  6. Fold in Plums: Gently fold half of the chopped plums into the batter to distribute fruit evenly without breaking it down.
  7. Fill the Tin: Pour the batter into the prepared slice tin and spread it to the edges for even baking.
  8. Prepare Cream Cheese Swirl: Whisk together the softened cream cheese and brown sugar until smooth. Dollop spoonfuls of this mixture over the cake batter and use a fork to create swirls, giving an attractive marbled effect.
  9. Add Remaining Plums: Place the remaining plum pieces on top of the cream cheese swirl, gently pressing them into the batter to embed.
  10. Bake: Bake for 40-45 minutes in the preheated oven until the cake is cooked through and the top is lightly browned. A skewer inserted in the center should come out clean.
  11. Cool and Serve: Allow the cake to cool completely in the tin before cutting into 12 servings to ensure clean slices.

Notes

  • Ensure butter and cream cheese are softened to room temperature for easy mixing.
  • Using fan bake helps to brown the top while baking the cake evenly.
  • Self-raising flour already contains baking powder, so no additional leavening is necessary.
  • The cake can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a different flavor profile, you can substitute plums with other stone fruits like peaches or nectarines.
